This past December, we launched an exciting new culinary chapter here at The Colony Hotel with the opening of a “pop-up” version of the well-known Manhattan restaurant Swifty’s right here under our Palm Beach roof. Today we’re happy to announce that Swifty’s at The Colony is now serving lunch Monday through Friday alongside its nightly dinners!

Resurrecting a New York City Icon at The Colony Palm Beach

For decades, Swifty’s was an Upper East Side magnet for foodies and socialites alike, including no shortage of celebrity regulars: from Martha Stewart and Bill Murray to Gwyneth Paltrow and Liza Minelli.

The restaurant closed in 2016, but now gets a rebirth here amid the sun and sand of Palm Beach, thanks to a limited-engagement partnership between Swifty’s owner Robert Caravaggi and The Colony Hotel.

“I am thrilled to have [Swifty’s] opening at the beautiful Colony Hotel,” Caravaggi said. “The Colony is the jewel of Palm Beach island, and this union is the perfect marriage.”

The Colony Swifty’s pop-up evokes the original Manhattan location while integrating some Palm Beach spirit as well. Classic Swifty’s dishes now sit alongside new offerings that tap the bounty of our local farms and waters, while the defining warm decor of the restaurant has been recreated with a few island flourishes here and there.

Caravaggi is here to see the Colony incarnation of his venerable eatery flourish, while Chef Stephen Attoe is on hand to consult our hotel’s Executive Chef Tom Whitaker.

Lunch at Swifty’s

We couldn’t be more excited to add a lunch menu at Swifty’s to our roster of on-site dining opportunities here at The Colony Palm Beach.

You’ll love the menu, which kicks off with a bang via starters such as the Jumbo Lump Crab Meat Salad & Tomato Aspici, the Artichoke Vinaigrette, and the Baked Onion Soup.

Entrees include such “old-school” Swifty’s favorites as the Twin Burgers and the Designer Meatloaf, plus Tuna Carpaccio, Chilled Poached Organic Salmon, and the Swifty’s Club Sandwich.

Definitely save some room for dessert, which might take the shape of Sticky Toffee Pudding with vanilla bean ice cream, Dark Chocolate Mousse capped with whipped cream, or the Tahitian Vanilla Creme Brûlée, which is (at the risk of hyperbole) a minor masterpiece.

With lunch at Swifty’s added to the mix, dining at The Colony is as good as it gets—not least considering some of those Swifty’s dishes are also on offer at our CPB restaurant as well (which serves breakfast, lunch, and dinner daily).
