Swifty’s at The Colony

Coming South for the Season. Swifty’s, once New York’s preeminent society boîte, is set to visit Palm Beach this season with a pop up at the iconic Colony Hotel.  An Upper East Side stalwart for almost two decades, Swifty’s ended its run in 2016 to the despair of Manhattan’s toniest set.  Now, founder Robert Caravaggi together with Colony Hotel owners Sarah and Andrew Wetenhall, bring the restaurant that inspired an international following to Palm Beach for a limited engagement opening December 2019.

This classic brasserie is as beloved for its scene as it is for its sensational menu items, which include The Colony’s fantastic lobster bisque. CPB is where Palm Beachers come to break bread—and rub elbows.

Born in Hexham, England, Tom Whitaker (The Colony’s Executive Chef) comes to us from a fine-dining career that has included Relais & Châteaux’s Fearrington House Restaurant (in Pittsboro, North Carolina) and Ashby Inn and Restaurant (in Paris, Virginia). Here, Whitaker helms CPB restaurant while overseeing The Colony’s dining program. “Fine dining is art,” shares Whitaker. “It is beauty created from the finest cuisine, in the best surroundings, with impeccable service. It is an orchestra, each person playing their part at the right place and time to forge an experience like no other, ensuring guests are overjoyed with something more than just a meal.”

Born in Charleston, South Carolina, Emma Isakoff (The Colony’s Pastry Chef) started her fine-dining career when she graduated from Skidmore College, relocating to Relais & Châteaux’s Fearrington House Restaurant (in Pittsboro, North Carolina). “My aim is to create pastries that transport people to joyful memories,” shares Isakoff. “These include grandmothers’ kitchens, trips to Paris patisseries, Thanksgiving pies for breakfast, or that finger of buttercream snatched from the back of a wedding cake before it was cut.”

This intimate area is a cozy extension of CPB restaurant. Come for the cocktails and the entertainment. And, come back for the chic and Palm Beacher–endorsed scene.

Head to this relaxed luncheonette for coffee house–style drinks and fare. Café 155’s “grab and go” menu features breakfast and lunch items plus a selection of snacks.

Bimini Bar

Sink into one of the sun-soaked chairs that decorate this chic, pool-side restaurant for a few bites, and, well, a few cocktails. Bimini Bar is the fashionable choice for creative cuisine, from our Cobb salad to our famous (and foodie-endorsed) hot dog.
