Swifty’s POOL
Swifty’s is set to return to Palm Beach this fall after a successful first season, now with new outdoor dining and services. Swifty’s POOL will serve lunch, dinner and cocktails around The Colony’s swimming pool, as well as alfresco seating under the hotel’s outdoor hanging garden. A more casual concept, Swifty’s POOL will still offer beloved Swifty’s favorites, plus live music and impromptu activations to keep the Swifty’s POOL patrons on their toes (think rum tastings, book readings, acoustic guitarists along with other engaging socially distanced endeavors).

Bluestone Lane at The Colony
A premium coffee experience can now be found at The Colony. With beans sourced sustainably from across Central and South America, Bluestone Lane’s Brooklyn, NY-based production team roasts sumptuous signature blends. Bluestone Lane @ The Colony Hotel is proud to feature a La Marzocco Linea PB espresso machine, an industry leader that is loved by baristas for its consistent results. Dine in on soups, salads, and sandwiches at our new cafe seating on The Colony’s historic South County Road steps, or shop our “grab and go” menu featuring breakfast and lunch fare, plus a selection of pastries, snacks, market and gift items.

Swifty’s, once New York’s preeminent society boîte, has found a new home at The Colony Hotel. Now, founder Robert Caravaggi together with Colony Hotel owners Sarah and Andrew Wetenhall, are offering the Palm Beach community the best cuisine you can enjoy from the comfort of your home. Beloved Swfity’s favorites are only a click away for Lunch and Dinner Pick-Up.
CPB Bar & Lounge
This intimate area is a cozy extension of Swifty’s POOL where Palm Beachers come to eat, drink, and rub elbows. Come for the cocktails designed in collaboration with our consultants at Bar Lab.
11 a.m. – Midnight Daily
Born in Hexham, England, Tom Whitaker (The Colony’s Executive Chef) comes to us from a fine-dining career that has included Relais & Châteaux’s Fearrington House Restaurant (in Pittsboro, North Carolina) and Ashby Inn and Restaurant (in Paris, Virginia). Here, Whitaker helms CPB restaurant while overseeing The Colony’s dining program. “Fine dining is art,” shares Whitaker. “It is beauty created from the finest cuisine, in the best surroundings, with impeccable service. It is an orchestra, each person playing their part at the right place and time to forge an experience like no other, ensuring guests are overjoyed with something more than just a meal.”
